How to spice up a Box Cake Mix- Strawberry Cake
I remember just like it was yesterday as a young entrepreneur. The excitement of baking and selling my baked goods with actual customers; it was coworkers of my mothers of course.; that’s besides the point.
Anyways I was making moves regardless selling my undone cupcakes that needed just a little bit more loving. There has always been something about baking for me. Its relaxing; stirring that creamy batter, being able to experiment and finally… finally being able to see the finished product after it has baked together, so perfectly in preheated oven. It’s all worth it.
I’m not a professional baker by any means, but when I am cooking in my kitchen, in my mind; I am . So today I made my brother a cake for his belated birthday. I went with a strawberry cake as requested, and topped it with a cream cheese icing and fresh sugared strawberries. Since I am not quite sure on how to make a cake from scratch, I opted in with a Betty Crocker boxed cake mix that I purchased from my local Walmart.
The direction on the back of the box called for :
1 Cup of Water
3 Eggs
1/3 Cup of Vegetable Oil
To Spice up my cake I use:
1 Cup of Goat Milk - Substituted for the vegetable Oil
3 Eggs
1/3 Cup of County Crock Butter - Melted
Fresh Lemon Zest
1 box of Jello-O Lemon Pudding mix
For the topping I mixed in a bowl:
Sliced fresh strawberries
Vanilla Extract
White Sugar
Because the strawberries do have a lot of moist I drained the juice and syrup so it would not make the cake soggy. Once the cake was done, I cut the top of the cake off so it could have a flat surface.
I think I put the icing on to soon because it started melting but it still turned out pretty good. To top it off I sprinkled some sugar on the strawberries on top of the cake.
This was my first time spicing up a cake, I more of a brownie, cupcake, cookie kind of gal. But I enjoyed the finished product at the end.
